CAHORS
Home to the Malbec and Tannat grapes, the Cahors region of France, situated in the heart of the country, has long been a source of black, tannic wines. These days, however, a new generation of winemakers is making graceful, elegant and lovely wines from these traditionally tough grapes.
Chateau De Gaudou
This ancient, 17th century chateau located about an hour from the city of Cahors is making some fantastic and well-priced cuvees from grapes that were once thought untamable. Winemaker Fabrice Durou has captured the beauty of the Malbec and Tannat grapes while subduing their legendary tannins.
Their 37 hectares of vineyards, with between 30 and 120 years of age, are planted on southeast-facing gravel slopes for maximum exposure, with grass between the rows to force the vines to work harder. With careful selection and sorting in the vineyard during harvest, Chateau Gaudou manages to make very elegant, fruit-centered but balanced wines.
WINES
Chateau de Gaudou Grande Lignee 2007, which sees slightly more oak, offers nice soft red and black fruits with vanilla undertones. Medium-bodied, with vanilla, spices, red fruits and an elegant structure, this balanced wine is perfect for roasts and BBQs. 156 HK$ per bottle
THE LANGUEDOC
The Languedoc has long been regarded as the kid brother to the Rhone and the source for inexpensive wines. While it might not be as well-known as its bigger sibling, this region is stepping up its quality and focusing on doing some great things.
Clos Bagatelle
The Clos Bagatelle domaine has been run by the same family since 1623, when their ancestors bought plots of land in and around the town of Saint-Chinian. Today, they farm 60 hectares (approx. 148.31 acres) of vineyards, whose soils are a combination of shist, limestone and clay, at an average altitude of 120 meters (396 feet). They treat their vines with the utmost care, using sustainable agriculture methods, and harvest everything manually.
These wines are really special and well-made, never too ripe or over the top but well-balanced by their fruit and their acidity. What results are wines that are not just traditional but offer a certain sense of place and time that is defined by the term terroir.
WINES
The Clos Bagatelle 'Jardin de Bagatelle' AOC 2009is an assemblage of Grenache (40%), Carignan (30%), and Syrah (30%) and comes from hilltop-planted, old-vine Grenache and Cinsault (50+ years old). Much more Rhone-like than its sibling, this offers dark berries with game, meat and olive notes.

Jean Aubron Muscadet de Sevre et Maine sur Lie
Since 1843, Jean Pascal Aubronis family has been tending their vineyards around the town of Vallet, outside of Nantes, near the Atlantic Coast. They own 11 hectares (about 27.19 acres) of the acclaimed Clos de liAudigere, which sits on calcium-rich deposits, allowing the full expression of the Melon de Bourgogne grape. This results in a beautiful, almost ethereal Muscadet de Sevre et Maine sur Lie.
The Grand Fief de l'Audigere is a classified vineyard, its wines recognized for their quality for centuries. Jean Aubron uses traditional vinification methods, cold fermentation and allows the wines to sit on their lees for between 6 and 10 months, depending on the yearis quality.

The taste:
The wine is visibly limpid, brilliant, an intense ruby red color, with
reflections of garnet. elegant, harmonious, with long aromatic persistence, revealing the aromas of spices, forest floor, small red fruit and rich perfumed roses_balanced tannins and well rounded, with a dry and persistent finish.
Serving Temperature:
18 C. It is advisable to uncork the bottle at least 2 - 3 hours before
serving. The wine benefits from being decantered in order to aeriate
the wine. Serve in crystal balloon glasses.
Recommended food accompaniment:
Red meats, game, mushroom and truffle dishes, aged cheeses such as
